These medallions are an homage to the wonderful cheerful holiday drink available all over the Caribbean - sorrel. We started with our new Aponoapono chocolate and ground it with dried Jamaican sorrel (hibiscus) and allspice. This produces a fudgy, spicy chocolate which we top with generous chunks of non-crystallised ginger. The perfect after-dinner medallion.
