Last year, we acquired a small amount of cacao from a newish farm in Heredia Province, Costa Rica - Shantu, Finca de Cacao. The owners, Oscar and Hilda, farm using agriforestry and chemical-free practices, celebrate and protect wildlife diversity on their farm, and are busy planting and farming 12 hectares of cacao trees.
A mutual friend introduced us to their cacao, and we loved the powerful cocoa flavour and the slight hint of banana. Enjoy our first Costa Rican cacao!
