We’ve been dreaming of this bar for a long time — and now, it’s finally here.

Our latest creation celebrates the exotic tonka bean, a dark, wrinkled seed cherished in gourmet kitchens and fine perfumeries for its rich, complex aroma. We've paired this beautifully fragrant spice with cacao sourced from the Philippines, and sweetened the bar exclusively with maple sugar from Pefferlaw Creek Farms, just outside of Uxbridge.

The result? A decadent, aromatic dark chocolate bar with smooth sweetness and layered notes of vanilla, almond, and warm spice.

The name of the bar reflects both our use of local Canadian maple sugar and a nod to the banned status of tonka beans in the United States due to the natural occurrence of coumarin in the bean. Canada and Europe, however, have never banned the use of the bean because it is nearly impossible to consume enough of the bean in food to pose any sort of risk. 

In fact, despite the ban, top chefs across North America seek out tonka for its extraordinary flavor, and it is used as a spice in dishes from crème brûlée and panna cotta to roasted vegetables.  

In Canada, its use as a spice is fully legal — and we’re pleased to feature it in this bold, unique bar.
