Our Dominican Republic cacao comes from Zorzal Cacao. This group purcahses cacao from 16 neighboring farms who share their vision for quality and conservation. The majority of farms are under their USDA organic certification umbrella program. Once pods are harvested, the wet beans are transported to the Zorzal fermentorium located in Los Arroyos. There the Zorzal team ferments and then dries the beans to maximise chocolate flavours and reduce acidity.
We think this 72% bar is perfect for those new to dark chocolate. It is chocolate forward with just a hint of red fruit.
