The very first cacao we worked with was from Trinidad and we've been keen to find another source of cacao from that island nation ever since. Garcia Estate is farmed by Joseph Garcia and sits in north central Trinidad. Mr. Garcia was part of Trinidad's Microlot Farmer Development Program, a program that trains and assists small holder cacao farmers in production of fine flavoured cacao.
Not too long after the program began, a number of these farms gained international acclaim by earning a place in the Top 20 cacao beans in the world as judged by the Cacao of Excellence Program in Paris.
We were able to secure a few bags of the Garcia Estate 2023 spring harvest and we loved that it promised a floral note, something new to our cacao libary of tastes. It delivers! This complex cacao offers floral notes, over a base of nutty roastiness or tobacco; a complex cacao.
