What to do with Leftover Chocolate
Ok, you are probably saying "What world does she live in? Leftover chocolate??" . At our house we sometimes end up with the odd bar that we can't identify. We gather these all up and make treats. One of our favourites, that provides immediate gratification, so important when talking about chocolate treats, is the Lava Cake. This easy recipe uses two of our bars and makes two lava cakes.
2 bars DesBarres chocolate
2 tbsp butter
1 tbsp sugar
1 tsp vanilla (good with orange liqueur or strong coffee also)
1 egg
2 tbsp flour
Preheat oven to 400 F. Generously butter two ramekins. In a heat proof bowl over barely simmering water, melt chocolate and butter. Remove from heat and stir in sugar and vanilla, then egg. Fold in flour. Spoon batter into the ramekins. Bake for 8 minutes or until cake is just firm to the touch. Run a knife around the inside of each ramekin, place an upside-down plate on top, invert, and remove the ramekin. Garnish with raspberries and a dollop of whipped cream.
